如何选购海参?

1 1)通常处理好的海参是有干又硬,不要有太重的湿气。
2 2)没有腥臭味,有海潮的味道。如果有腥味,就表示不很新鲜。
3 3)海参上的石灰,是天然物质,通常处理干净才晒。如果太多的石灰在干参上,会影响它发头。差别2-3倍,必须注意。

细节:
煮海参必须2分钟便得熄火,不开盖至水冷。煮太久会没有口感了。
焖、红烧/-冰箱内发2-3天就够
滚汤、切片拌炒-4-5

材料:长豆、猪肉碎(馅料)、葱花、蒜米
调味料:酱油、少糖、盐、胡椒粉、薯粉、蛋

1)把猪肉碎放些盐、胡椒粉、蒜米、葱花、薯粉、一粒蛋搅匀,腌上10分钟。
2)先把长豆煮2-3分钟,过冷水备用。
3)长豆打个圈结,粗端(头)短些,细端(尾)长些。将粗端由内向外,缠绕一下,塞猪肉碎进去。
4)小火炸一炸有肉的长豆,过后大火煎(把油逼出来)。
5)为了确保长豆及猪肉熟透,蒸过5分钟。
6)爆香蒜米,注入水、糖、盐、胡椒粉、辣豆酱。
7)加入薯粉打芡,就可盛去长豆。盛起之前加点葱花就可以了。

4) Fried stuffed long beans with low heat, and high heat after (forced out the oil).
5) In order to ensure the long beans and pork cooked steamed for 5 minutes.
6) Sauce –fragrant garlic and place water, sugar, salt, pepper, spicy miso.
7) Add the tapioca flour for thickening.  Dish up, add a little chopped green onion.

4)盛起备用,爆香蒜米,注入水、糖、盐、胡椒粉、酱油。
5)加入薯粉打芡,就可盛去煎好了酿矮瓜/茄子。
6)盛起之前加点葱花就可以了。

就来个腌莎莉。

材料:
莎莉,糖,盐,话梅

步骤:
1)把莎莉去皮,用盐腌上两小时,必须用筲箕。方便水漏。
2)放进玻璃品里,加糖,话梅。
3)腌上两天-三天就好了。

Ingredient:
Ambarella Fruits, sugar, salt, sour plum

Step:
1) Peel off Amberella Fruits,using salt marinade for 2 hours.
2) Put into glass bottle, and add sugar with sour plum.
3) After 2-3 days can serve to eat.

不过,很快又好吃。
This menu really suite lazy person,
to whom prefer fast and delicious food.

材料:
两只鸡翅,10g的黑胡椒调味料(Cosway产品), 麻油

步骤:
1)鸡翅洗干净,搽上黑胡椒调味料,麻油, 腌上20分钟。
2)放进烤箱,180度烤上半个钟。

Ingredient:
2 wing
5g of Black Pepper of Seasoning Mix ( Can get it from Cosway)
Sesame oil

Step:
1) Wash the wing, put black pepper seasoning, sesame oil, and marinade for 20 minutes.
2) Place into oven with 180c, about 30minutes.

材料: 鸡、薯仔、姜、水
调味料:少糖、蠔油、黑酱油、胡椒粉、盐

1)鸡洗净切块。
2)薯仔也去皮洗净切块。
3)炸薯仔至黄,盛起待用。
4)用姜起锅爆炒鸡。
5)鸡爆至出油变蕉黄后加入糖炒一二再放入蠔油、盐、黑酱油及加水焖15分钟
6)再加入薯仔焖至肉酥薯仔软即可。
7)可加入绍兴酒,盛起。
Ingredients:
200gm chicken
400g Potato
1 Teaspoon Ginger, Grated
Boiled Water

Seasonings:
1/8 Sugar
1/2 Teaspoon Oyster Sauce
1/3 Teaspoon Black Bean Sauce
1/8 Pepper Powder
1/8 Salt
2    Teaspoon Shao Xin wine

Step:
1)  Wash chicken, sliced.
2)   Wash  potatoes, Peeled, Chopped Coarsely.
3)   Fried potatoes until gold in color.
4)   Preheated wok to fragant chopped ginger and chicken.
5)   Place seasonings and water.
6)   Placed potatoes, stew it.
7)  Placed Shao Xin wine,dish up and serve.

来个新产品-龟苓膏乳酪
材料(下层):
龟苓膏粉

材料(上层):
Whipping Cream
Philadelphia Cheese
鱼胶粉
Konnyaku粉

做法:
1)先煮上层,滚水加入Konnyaku粉,鱼胶粉及其他材料。
2)搅均匀,然后放到7”盘,等凝固了,再开始煮龟苓膏。
3)龟苓膏煮好了倒入等凝固,就可以放进冰箱。
4)上2小时, 就可以吃了。

×不鼓励用盘,有杯会好点,因为两层都是很滑的, 不能固定,再说过放旧点就会出水。

一条红萝卜
7粒-10粒红枣
2粒-3粒蜜枣
鱿鱼干适量
半个鸡胸肉
200-250gm西洋菜
2liter 水 
盐(要喝才加)

用具: 
免火再煮锅

Ingredient:
Carrot
7-10pcs Red Date
2-3pcs Glaced date
Dried squid
Half whole Chicken Chest (Chopped)
200-300gm Watercress  

2liter Water
Salt (Put when want to serve)

步骤:
1)洗干净鸡胸肉及其他材料。
2)鸡胸肉及红萝卜切块。
3)所有材料放进锅。
4)以免火再煮锅煲上大火煮滚20分钟,放进煲架再煮上1个半小时。 

Step:
1) Wash chicken chest and other ingredient.
2) Chopped chicken chest and carrot.
3)Place all ingredient to a pot.
4)Using stainless steel for energy saving pot, heat until boiling around 20minutes and put on pot tray cook for another one and half hour.

1)  Wash the eggs.

材料:一支猪脚、姜、添丁甜醋
调味料: 盐

步骤:
1)把猪脚用热水烫过,去血腥味。
2) 爆香姜,把猪脚放入炒至变白。
3)注入水和黑醋。
4)慢火焖45分钟至至猪肉够软。

×添丁甜醋是已经调味了,很方便,不必加糖。马来西亚只有东马那带才找到

Ingredient:
One whole pork knuckle -chopped into chunks
ginger  - peeled and sliced
half bottle of sweetened black vinegar
Salt

Step:
1) Drain and wash pork knuckle with hot water prevent blood smell.
2) Fragrant ginger, put  pork knuckle and stir-fry until white.
3) Pour water and  sweetened black vinegar.
4)  Boil then lower heat to simmer for about 45minutes or until tender.


*There is using ready made sweet and sour vinegar, no need to put sugar. Can find the products at East Malaysia.
