葡萄牙蒸鱼【马鲅鱼】Steamed Threadfin/Ikan Kurau in Portuguese

我看到网络很少人分享这道菜肴,
华人部落格写这话题少之又少,
我唯有参考马来部落格来煮这道菜。
我的鱼不见下半段,因为切开煎给小瓜吃,
比较这道菜是辣的,小孩不能吃。

葡萄牙蒸鱼酱
6颗 新鲜的红辣椒(去籽,切成小块)
10颗。干辣椒
1茶匙 烤马来栈/虾酱
4颗葱 (可以使用大洋葱取代)
1/4茶 匙盐
2茶匙 鱼露
21/2茶匙 糖
1/2 酸柑(榨汁)
2香茅 (切成薄片)
4茶匙 食用油
8茶匙水+罗望子果肉小匙

其他附加材料:
3片 黄姜叶
2片 麻风柑叶
一粒 切六大葱
三条切2寸长的长豆
一粒切四的番茄

做法:
1) 混合所有成分一起在搅拌机中,确保叁巴糊混合均匀,光滑。
2) 预热油,慢火爆香所有材料直嗅到香味为止。
3) 将鱼铺在箔上,加入葡萄牙鱼叁峇/酱料,包好。
4) 加入附加材料搅均匀。
5) 鱼蒸上15分钟.

Portuguese Style Steamed-Fish Paste :
6 oz. fresh red chilies (seeded and cut into small pieces)
10 0z. dry chilies
1 tsp toasted belacan/shrimp paste
4 oz. shallots (can use large onions if you want to)
1/4 tsp salt
2 tsp fish sauce
2 1/2 tsp sugar
1/2 lime (extract juice)
2 lemongrass/serai (cut into thin slices)
4 tsp cooking oil
8 tsp of water + tamarind pulp

Other ingredients:
3 oz. turmeric leaves
2 oz. kaffir lime leaves
A large onion (cut cube)
3  long beans (
cut 2-inch-long)
A tomato


Step:
1) Blend all the ingredient together in the blender,make sure the sambal paste is well blended and smooth.
2) Preheat oil, and stir-fry all the ingredients till fragrant.
3)  Place the fish on the foil, put the paste on the fish.
4)  Add in other ingredients when steaming fish.
5) Steam for 15 minutes
