香菇云耳蒸菜园鸡 Steam Chicken with Chinese Mushrooms,Enoki and Jew's ear/Cloud ear fungus

这道家常菜我由小吃到大,
我个人认为挺健康的,
我超喜欢吃。

材料:
半只菜园鸡(400g)
干花菇4朵切粗片
干金针菇1小扎
干云耳60g
姜(切丝)半汤匙
蒜米/红葱半汤匙  (我两个都放)
两粒红枣 切幼

调味料(分两份,一份炒材料,一份腌鸡):
生粉半汤匙
绍兴酒1汤匙
生抽半汤匙
耗油1汤匙
白糖1茶匙
胡椒粉1小勺
姜粉 1小勺

做法:
1) 干冬菇、干云耳及干金针菇分别用温水浸泡4小时至柔软无硬芯。干云耳剪去根部,撕成适口小块。干冬菇切块,干金针菇我通常打结。
2) 鸡肉清洗干净,剁成块。然后加入一份调味料-生粉、绍兴酒酒、生抽、白糖和姜粉,腌制15分钟。
3)爆香蒜米/红葱及姜,加入干冬菇、干云耳、干金针菇、红枣及一份调味料。炒到听到噼噼叭叭声时加入鸡肉搅均匀。(这个可以选择不必这样做,可是我每次认为这样比较入味)
4) 将搅均匀的材料摆入较深的盘中,放入已经烧开的蒸锅中,大火蒸20分钟左右即可。

Ingredients:
Half Kampung chicken (400g)
Dry mushrooms cut into cube
40gm Dry Enoki
60g dried jew's ear/Cloud ear fungus
Ginger (shredded) half tablespoons
Garlic/Onion half tablespoon(I add both)
Red Dates 2pcs

Seasonings (two portions, first portions for fried material, second portion for marinated chicken):
Cornstarch half tablespoons
Shaoxing rice wine 1 tablespoon
Soy sauce half tablespoons
Oyster Sauce 1 tablespoon
Sugar 1 teaspoon
Pepper a pinch
Ginger powder a pinch

Steps:
1) Using warm water and soak 4 hours for dried mushrooms, dried jew's ear/Cloud ear fungus and dry Enoki until its become soft. Cut off the dried jew's ear  roots, torn into small pieces. Diced dried mushrooms, and tie dry enoki.
2) Clean chicken,chop block. Then add a seasoning(1st portion) - cornstarch, Shaoxing wine, soy sauce,oyster sauce, sugar and ginger,marinated for 15 minutes.
3) Saute garlic/Onion and ginger, add dried mushrooms, dried cloud ears, dried mushroom ,red dates and a seasoning(second portion). Add chicken and stir well.(This step can skip if don't want)
4) Put the ready mix evenly to a deep dish, and into already boiling steamer, and steam for about 20 minutes.
