糯米鸡 GlutinuosChickenRice 『Lor Mai Gai』
突然间很想学的食谱,
就动手做了,这次算成功了,
我的食谱都是参考网站而来的,
份量我做不多,可以自行参考。

材料(十个小铝碗):
糯米 500gm
蒜米 7瓣切幼
红葱 6粒切片
鸡全腿-去骨切块
香菇-3-4朵切块
腊肠一条切片

调味料(需要准备的-简谱):
糯米鸡材料
耗油
黑酱油
麻油
酱青
胡椒粉
五香粉
生粉
绍兴酒


A) 腌鸡及香菇
耗油,生粉各一汤匙, 酱青,绍兴酒各半汤匙, 黑酱油,姜汁,麻油,糖各一茶匙
做法:
1)所以材料加入鸡及香菇腌上1小时,我腌隔夜比较入味。

炒均匀的糯米Glutinous rice

B)  糯米
红葱,蒜米,耗油两汤匙, 酱青一汤匙,糖,黑酱油, 麻油各一茶匙, 五香粉,胡椒粉少许
做法:
1)  糯米洗了,用水浸泡隔夜,放冰厨。
×可以选择不跟这个步骤,我觉得这个步骤让糯米比较容易熟透。
2)从冰厨拿出倒掉水份马上热油,爆香蒜葱,加入糯米及调味料搅至颜色均匀。

C) 酱汁(淋在糯米)
 红葱,蒜米,麻油,酱青各半汤匙, 耗油两汤匙, 糖两茶匙, 清水200ml,胡椒粉少许
1) 热油,爆香蒜葱,加入所有调味料备用。

最后做法:
酱汁(淋在糯米)Sauce(Pour at Glutinous rice)
1)所有的材料准备好后,就用铝碗把腊肠,鸡肉及香菇排好。
2)加入炒好的糯米,紧紧压一压。
3)注入酱汁,盖过米就行了。
4)把铝碗盖掉,放入锅蒸上45分钟就可以了。

Ingredients (ten small aluminum bowl):
Glutinous rice 500gm
Garlic (chopped)
Red onion (chopped)
Whole chicken legs - boneless cuts
Mushrooms
Chinese sausage

Seasonings (need to be prepared):
Osyter sauce
Dark soy sauce
Sesame oil
Soy Sauce
Pepper
Allspice
Cornstarch
Shaoxing wine
Sugar

A) Marinated chicken and mushrooms
Oyster sauce and cornstarch- 1 tablespoon , soya sauce, shaoxing wine and dark soy sauce -half tablespoons , ginger, sesame oil, sugar-1 teaspoon
Step:
1) Marinate chicken and mushrooms and all the seasonings for 1 hour , normally I will make it overnight for more tasty purpose.

B) Glutinous rice
Red onion, garlic, 2 tablespoons of oyster sauce,1 tablespoon of soya sauce, sugar, black soy sauce, sesame oil-each 1 teaspoon, a pinch of allspice and pepper
Step:
1) Wash the glutinous rice, soaked in water overnight, put refregirator.
× can choose not to follow this step, I think this step is easier to let glutinous rice cooked.
2) Drained out the water , and heat wok. Fragrant onion, garlic, add glutinous rice and seasonings and stir until rice become brown in color.

C) Sauce(Pour at Glutinous rice)
Red onion, garlic, sesame oil, soya sauce half tablespoon two tablespoons of fuel, two teaspoons of sugar, water 200ml, pepper
Step:
1) Heat wok, Fragrant onion, garlic, and add all the seasoning to make sauce.

Last practice:
1) When all ingredient are ready, put sausage, chicken and mushrooms in an aluminum bowl.
2) Adding fried glutinous rice, and pressure on tightly.
3) Add the sauce, overshadowed the rice.
4) Lid off the aluminum bowl , put into a pot and steam for 45 minutes on it.
